Dustin Martin, Owner/Pitmaster of Hill City Chop House, has loved smoking meats and feeding his family and friends for years. Dustin’s unforgettable meals go hand in hand with his memorable personality, which leaves a lasting impression. It’s been no secret that when Dustin is around you will definitely be fed, and very well at that. His passion for throwing logs in a firebox and trimming briskets started as just a hobby while working in the Bakken oil shell of North Dakota. Dustin kept his crew fed and occasionally was hired to cook for other companies. After moving back home to Texas in 2015, Dustin and his fiancé Nicole started catering on the weekends aside from their full-time jobs. In 2021, after an unfortunate house fire, they decided to start up a spark of their own and chase the dream of cooking barbecue full-time. On October 6, 2022, they opened the doors to Hill City Chop House in Tolar, Texas.
When Dustin is not serving up juicy cuts of meat at the butcher block you can find him adventuring outdoors with Nicole and their new baby girl Lakelee.
