Olmos BBQ was started from the family tradition of large family barbecues; John Paul Govea’s grandfather was a retired mariachi who would spend Sundays smoking barbecue for his large family. When the family patriarch passed away in 2017, John Paul filled the void and started barbecuing and Olmos BBQ was created in 2021. The Olmos BBQ logo of a guitar-strumming mariachi calavera is in honor of John Paul’s grandfather.
